Monday Meal Plan

Unsurprisingly, for those of you who know me well, I made WAY TOO MUCH food for my party on Saturday night.  Even for me this one was absurd; it's like I went to the grocery store and all of a sudden thought that I have 100 more friends than I actually do.  So most of this week's meal plan is potatoes and salad.  And cupcakes.  Although, I'd be happy for someone to come and take a few of the cupcakes off my hands.  I love me some sweets, but there is just no way I'm going to eat them all.

I'm going to make twice baked potatoes; the link is actually just a tutorial on the process.  It's pretty simple, you bake potatoes and then scoop out the insides, mash them with delicious things, and put them back in the oven.  I'm going to freeze some of them for later, because I don't want to actually turn into a potato.

I also have some leftover, pre-cooked broccoli.  So I'm going to try my hand at the broccoli fritters again.  The room for failure is lower this time, since the broccoli is pre-cooked. 

Meal Plan, Week of March 18th, 2013

I don't really know what's going on today.  I didn't pack a lunch because my kitchen is too much of a disaster to find anything.  I went to Starbucks for breakfast.  I'm just calling today a wash.

Hopefully at some point during this week I will come up with a brilliant plan to rule the world.  Or just one for a dinner that isn't solely potatoes.
