With all the drama with my car, my parent's coming to visit, and life in general, I haven't really cooked anything noteworthy. I did toast a bagel at work this morning, so that's positive. In case you're curious, I get my bagels at Bagel Rising in Allston. They are the best that I've ever had, and they have some really cool creative sandwiches. If you're in the area, check it out.
On Friday, I went to dinner with my parents and our friends Larry and Maggie. We went to Helmand in Cambridge, which serves Afghani food. I didn't take any pictures, but I can promise you that the food is amazing. I had a lamb dish with spinach, rice, and okra, which was delish. The table shared two appetizers, the best was an eggplant dish. Then for dessert, I had baklava, which is one of my favorites. If you're in Cambridge and looking to go somewhere a little different, I'd definitely recommend it.
This weeks meal plan will consist of a hodgepodge of things. I still have a fair amount of spinach left over from the pizza crust, I'm going to make a spinach quiche. I have always loved quiche, it's easy to make, if you substitute the cream for lower fat milk and use a touch less cheese, it isn't horrible for you, and it's good warm or cold.
I am also going to make a nice pot of soup, for lunches this week. I haven't quite decided on one, but I'm leaning towards creamy broccoli and white bean. It looks really good, and very healthy.
Veggies, sandwich, yogurt
Leftover pizza, healthy smoothie
Salad, cheese toast, yogurt
Creamy Broccoli White Bean Soup
Leftover soup, salad, yogurt
Salad and quiche
Black bean quesadilla, salad
Soup, quiche, yogurt
Leftovers/out with friends
I don't really plan meals for Saturday and Sunday because I tend to either go out or eat leftovers/random odds and ends from the fridge.
As always, this is only a guide. Have a lovely Monday!!!
