Mardi Gras!

In honor of Mardi Gras, a friend is having a potluck tonight.  I love potlucks, especially when they are hosted by people who like food as much as I do; you know it's going to be good!  I made a Kale and Mushroom lasagna over the snow day on Friday, so I'm going to take that.  The intention behind the lasagna was to have it to eat all week for dinner, but I think that sharing it with friends is better.  The recipe is from Kalyn's Kitchen.  I tasted it (I mean, I'm not going to take food I haven't tried yet to a friends...what if it's gross!) and it's delicious.  I did substitute the cottage cheese for ricotta because I prefer ricotta in a lasagna.  Anyhow, here is the link, with thanks to Kalyn for introducing me to such a delightful, vegetable filled dinner.  Much appreciated!

Tomorrow, Lent begins.  In the spirit of the season, I have decided to give up going out to eat more than twice a week.  Lately, I've fallen into back into the habit of eating out frequently, so I'm trying to get that back under control a little bit.  It's so easy to eat at home, especially when I remember that I don't have to make myself a four course meal every night.  There's nothing wrong with having eggs and salad from a bag for dinner a few nights a week. 

A few years ago, I went cold turkey on going out to eat, only breaking the streak when my parents came to town (I figured that since they were nice enough to come visit me, I shouldn't subject them to same crappy PBJ/pasta with sauce out of a jar/eggs on toast regimen that I had going on at the time).  I saved a HUGE amount of money, ate more healthily, and probably picked up a few new kitchen skillz, but there was one downside: my social life took a hit.  Going out to eat is a huge part of socialization for most people, myself included, and I felt left out of the circle.  So this year I'm taking a bit more of a moderate approach.  Hopefully I can also host more dinners and get my friends cooking with me.  But sometimes, you just want to go out and that's ok too!

  2. Yea, it's pretty awesome. Once I get him one we need to figure out how to get good pictures of him in it.
